Muffiny Goodness

I picked up some blueberries while I was grocery shopping yesterday and decided to make some blueberry muffins today with them. I just kind of threw together some ingredients (hoping for the best) and made my own recipe on the spot and I thought I’d share the recipe with you all because they turned out really yummy.

  • 1-1/4 cups of self-rasing flour sifted
  • 1/2 cup of brown sugar
  • 1/4 cup of butter melted and cooled (I used a lactose free brand)
  • 1 egg
  • 1/3 cup of milk (I used a lactose free milk)
  • 100g of blue berries
  • 3 tablespoons of caster sugar
  • A few drops of vanilla essence
  1. Preheat oven to 200 degrees C and grease a muffin large pan (it makes about 12 muffins). Combine flour and caster/brown sugar in a mixing bowl.
  2. Using a fork, whisk butter, egg, milk and vanilla essence together in a jug. Add it and the blueberries to the flour/sugar mix and fold together until just combined.
  3. Spoon into the muffin pan and bake in the oven for about 15 minutes or until a fork inserted into one of the muffins comes out clean. Let them cool for a minute or two and sprinkle some icing sugar over them. Enjoy. 🙂

    Hey, that Muffin making process involves ‘cooking’ doesn’t it? I am unfamiliar with this term.

    Those must be really small crates or very very large blueberries! Its quite amusing how we’ve lost all sense of perspective and relative sizes when drawing these days. I blame the internet. 😛

    Luke, yes it does involve cooking.

    I’d like to point out my oven is a bit odd and 200 is about 180, so you might want to try cooking them at bout 160 to 180 on yours.

    kitta, i tried your muffins. they turned out very well. a couple of translation notes… 200 C is roughly 400 F – i used 375 F and they took a little longer than 15 minutes (your oven must not be that bad). caster sugar is just fine graind sugar – i used regular sugar. 100g is about 4 oz – i used maybe 6 oz. luckily you still use tablespoons and cups! oh, and i used a tablespoon baking powder/ cup flour for self-rising. they could have been fluffier but oh well. that’s my fault.
